Classic Beef Bourguignon


Inspired by French countryside winters, this slow-cooked beef bourguignon is a love letter to cold days spent inside, watching snow fall softly outside.

  • Ingredients: Beef chuck, red wine, carrots, onions, mushrooms.

Ingredients:

  • 2 lbs beef chuck, cut into chunks

  • 1 cup red wine

  • 2 carrots, sliced

  • 1 onion, diced

  • 1 cup mushrooms, halved

  • 2 cloves garlic, minced

  • 2 cups beef broth

  • 2 tbsp tomato paste

  • 1 tbsp olive oil

  • 1 bay leaf

  • Salt and pepper to taste


Steps:

  1. In a large pot, sear beef chunks in olive oil until browned.

  2. Remove beef, then add carrots, onion, and garlic to the pot. Sauté until softened.

  3. Return beef to the pot, add red wine, and cook until reduced by half.

  4. Add beef broth, tomato paste, bay leaf, and mushrooms. Simmer on low for 2-3 hours.

  5. Season with salt and pepper, then serve with mashed potatoes or bread.
