One-Pot Chicken and Dumplings



This dish reminds me of my grandmother's kitchen, where the aroma of chicken and freshly made dumplings floated through the air on frosty evenings.

  • Ingredients: Chicken thighs, carrots, celery, biscuit dough.

  • Making Dumplings: Tips for light and fluffy dumplings.

  • Broth Tips: How to make the base rich and savoury.

  • Extra Touches: Add fresh herbs like parsley or thyme.


Ingredients:

  • 1 lb chicken thighs, cubed

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 4 cups chicken broth

  • 1 cup flour

  • 1 tbsp baking powder

  • 1 cup milk

  • 1 tbsp olive oil

  • Salt and pepper to taste


Steps:

  1. In a large pot, sauté chicken, carrots, and celery in olive oil until chicken is cooked through.

  2. Pour in chicken broth, bring to a simmer.

  3. For dumplings, mix flour, baking powder, salt, and milk until a dough forms.

  4. Drop spoonfuls of dough into the pot. Cover and simmer for 15 minutes.

  5. Season to taste and serve hot.
